A Creative Culinary Evening with Chef Arnold Mateo
On a crisp Saturday night in October, guests gathered at the Revelstoke Visual Arts Centre for Sip & Savour with Chef Arnoul Mateo, the final event of this year’s Revel & Feast. Surrounded by the works of Clement Yeh and additional gallery installations, the space itself became part of the experience — an art-filled environment that shaped the night.
Chef Arnoul led the experience with a four-course menu built from ingredients he foraged and sourced locally. Each dish was paired with a drink to complement the flavours on the plate. With Chef Karina Miller and Chef Bruno Mazzoo cooking alongside him, Kayla Harrison pouring drinks, and Brett (Juice!) on decks, the night moved with a comfortable, steady rhythm.
Before each course, Chef Arnoul stepped into the gallery to introduce the dish, sharing the inspiration behind it and the ingredients that shaped it. Guests were then invited to help themselves to the plated food and the accompanying drink pairing.
Sip & Savour reflected exactly what Revel & Feast set out to offer: a space where chefs can express their craft freely and explore the flavours of Revelstoke in imaginative ways. Opportunities like this can be rare, and the event showed what becomes possible when chefs are given full creative trust. Chef Arnoul embraced that freedom, and the results were unforgettable.
The evening lasted several hours, marked by conversation, discovery, and the shared excitement of tasting something crafted with care. It was a fitting finale to the festival, and one we are already looking forward to hosting again.
