Originally from France, Arnoul settled in Revelstoke’s beautiful valley seven years ago. Trained as an ecologist and shaped by home cooking in France, Arnoul’s cuisine reflects a deep respect for land and season.

Arnoul is passionate about creating food using sustainable ingredients and supporting small-scale regenerative farming. Through firsthand experience, he has seen how slow food practices shape landscapes and communities while helping preserve nature and our climate.
For many seasons, Arnoul worked as a commercial forager in British Columbia, gathering wild mushrooms and berries across the province. This close relationship with the land continues to guide his approach to cooking.
