A Foraging and Cooking Experience with Chef Aidan Cain

On a sunny Friday morning, participants gathered at the trailhead near the Revelstoke Nordic Centre for Forge & Fire, an immersive foraging and cooking experience led by Chef Aidan Cain. The day began with a walk through the forest as Chef Aiden shared his expertise on foraging for wild mushrooms, discussing how to identify edible varieties and sustainably harvest them.

After a peaceful morning spent collecting mushrooms, the group returned to the Nordic Centre to prepare their harvest. With the fire crackling, Chef Aiden and his assistant, Chef Nate, demonstrated how to clean, prep, and cook the mushrooms over an open flame.

The outdoor kitchen came alive with the scent of sizzling butter and herbs as Chef Aiden cooked a spectacular meal over fire, walking participants through his process and sharing tips along the way. Together, the group enjoyed a three-course meal featuring local and foraged ingredients:

It was a beautiful, hands-on celebration of food, fire, and the forest — a true reflection of the Revel & Feast’s spirit of connection between land, chef, and community.
