Alex barton

Meet Alex. For Alex, great cooking is about curiosity, patience, and discovering something unexpected. Whether he's searching the forest floor for wild mushrooms or working with pristine seafood, he believes the best ingredients deserve time, care, and respect.

  • A TASTE OF HOME

    Rouladen.

Thin slices of beef wrapped around bacon, pickles, and Dijon mustard, then slowly braised until fork-tender.

It's a classic German comfort dish that Alex grew up eating, made by his mother, and one that still reminds him of family dinners around the table. No matter where life has taken him, it's the meal that always feels like home.

  • Always in My Kitchen

    Fresh seafood.

For Alex, seafood offers endless possibilities.

Some ingredients are forgiving, others demand precision, but that's exactly what keeps him inspired. He enjoys the challenge of transforming simple, fresh seafood into something memorable through technique and thoughtful preparation.

Inspired by the Wild

Wild mushrooms are one of Alex's greatest culinary passions.

Every variety brings its own flavour, texture, and possibilities in the kitchen. Even better is the search itself. Foraging feels like a treasure hunt through the forest, where every hike holds the promise of discovering something extraordinary.

  • Lessons From the Kitchen

One of Alex's biggest learning moments came from baking.

Trying to "wing it" taught him that baking rewards precision, not guesswork. Understanding the role each ingredient plays, and why each step matters, transformed the way he approached not only baking but cooking as a whole.

That lesson reinforced something he still believes today: technique gives you the freedom to create.

  • The Best Advice I've Ever Received

    Take your time.

    Flavour can't be rushed.

Professional kitchens often demand speed, but Alex believes the best food comes from slowing down, paying attention to every step, and giving ingredients the time they need to become something special.

A Favourite Food Memory

At 21, shortly after moving to the Rockies for a summer job, Alex headed out on a solo hike.

His mushroom knowledge was limited, but something caught his eye: a small honeycomb-shaped mushroom peeking through the forest floor.

A morel.

After carefully identifying it back home, he pan-fried it simply with butter, salt, and pepper in a cast iron pan. Rich, earthy, and unlike anything he'd tasted before, that first bite sparked an obsession.

Every spring since, you'll find Alex back in the woods, searching for more.
